There is something quite delightful about this sparkling Vouvray from Domaine des Aubuisières. It is 100% Chenin Blanc made using the same traditional methods as Champagne. The vigneron Bernard Fouquet has created a light and refreshing sparkling wine, dry and fruity but, and this is what separates it from many of the mass market sparkling wines, this Vouvray has length and depth on the palate and layers of flavours that gives it a complexity that does not disappear when shared with food.
