This is stunning. Made from 50% Mauzac, 25% Muscadelle and 25% Sauvignon, the harvest is very late in the year and consists of three selective pickings of the botrytised, or noble rotted grapes. This gives highly concentrated fruit and therefore a rich powerful wine with high residual sugar content, 140g/l. The wine matures in oak barrels for two years which adds to the structure and softens the acidity of the Mauzac, the grape variety used to make Blanquette de Limoux, which is a dry sparkling wine. It is this balance of sweetness and acidity which makes such a great wine. It obviously is a dessert wine which lends itself to tarts and would go very well with the traditional British fruitcake. It is also recommended to accompany foie gras but this a matter of taste and not necessarily everyone's.
