Domaine de Genouillac, Fer ServadouVin de Pays du Comté Tolosan, 20069.00 € (equiv 12.00 €/Ltr)13.0% Alc/VolThe area which is covered by the Vin de Pays de Comté Tolosan is immense, it is one of the orginal ‘Big Four' wine producing regions along with Vin de Pays du Jardin de la France, Vin de Pays Comtés Rhodaniens and Vin de Pays d'Oc. This area covers all the South West of France from the Basque Coast to the border with the Roussillon region and as far north as to include the very few wines grown in the Cantal department. The vast majority of wines given this label are not worth mentioning, one however made from 100% Fer Servadou or Baucol as it is also known, merits it place as one of the most exciting cuvées produced in recent years in this region. Fer Servadou is a typical Gaillacois variety and when blended with Duras and Syrah amongst others give Gaillac Red that characteristic blackcurrant quality. This wine has been made using the same methods as the Syrah. There is a little less oak ageing, 12 months, which gives the wine some extra body and a toasty backbone without destroying the elegance. The wine will at its best from now to 2012.
