Situated on the north western edge of the commune of Gaillac and planted with the vines, many of them very old, that are commonly found in the area namely Duras, Syrah, Fer Servadou for the red wines and Chassan, Loin de l'oeil and Sauvignon for the white wines. This wine is 100% Syrah and therefore falls outside of the local appellation rules and is designated a Vin de Pays. This is far from the common conception of a Vin de Pays, the yield is kept low by removing some of the buds giving the remaining fruit its intense complexity. As with all wines from Domaine Genouillac only wild yeast found naturally on the grapes is used during the fermentation. The wine is matured for 12 to 18 months in oak barrels before bottling giving firmness to the structure. This wine is ready to drink now and would accompany a rich meat dish; it will mellow over the next few years but is not made for the long term.
