Where as most of the Bourgogne Aligoté grown in the Côte d'Or comes from the flat land that surrounds the famous hillsides the Aligoté vines planted in the Yonne are on the south facing slopes. Ghislaine and Jean-Huges Goisot regard their Bourgogne Aligoté as important as all their other wines that they produce in the commune of Saint Bris. Made in the traditional way this wine has intense layers of minerality and fresh fruit. The soil in the area is known for its fossils, deposits of oyster shells from millions of years ago and what better accompaniment to have with this wine than a plate of oysters today.
