The first wine to be tasted was the Mauzac Nature. This is a sparkling wine made using the traditional gaillac method "Methode Gaillacoise". This method was first used in the 16th century well before Dom Perignon caused a craze in the Champagne region of France. It is also used in Limoux where it is known as Methode Rurale. The wine is made with 100% Mauzac Rose; there are 5 different Mauzacs in the family - Vert, Rose, Roux, Gris and Noir. The technique involves a single fermentation which is stopped before all the sugar has been turned to alcohol by a series of rackings (siphoning the juice from one container to another) and then bottled. Any residual sweetness comes from the grapes there is no added sugar which is often the case in Methode Champenoise. After some months the wine starts to re-ferment as there is some yeast, totally natural nothing extra incorporated, still present because there is no filtration. This gives the wine the bubbles. A less complicated method compared to Champagne but at the same time the vigneron needs to be very skilled and vigilant. The wine is quite simply divine. The fine bubbles give a gentle mousse, the aromas are a mix of white flowers jasmine and honeysuckle and pear. The palate has gentle nuances of apple and honey with a crisp, refreshing attack. For an aperitif this is far more gentle and attractive than champagne. It would accompany a fruity dessert but essentially this is a vin soif. You can drink whenever you want
