Jim Pearce was working in England growing strawberries. After a bit he decided with his wife Sarah to move their family to the South of France and bought a small business in the Minervois area. With immense enthusiasm they started transforming their sleepy vineyards. With the help of two "flying winemakers" an Australian David Morrison and a French man Raphael Genot, they made their first cuvee. The second vintage, the 2007 is a veritable success. This Merlot is a dark red with flecks of purple. The aromas are deep and powerful, there is a pronounced vanilla and dark berry bouquet with gives way to a palate very soft and fruity with a good spicy finish.

"Take a beautiful old wine estate in an unfashionable area, give it new English owners and co-opt Aussie David Morrisson as a consultant and ... bingo - great flavours, great style, sensible prices. So many French Merlots are dull. Not this one. It's throwing off clouds of blackberry, blackcurrant, and mint aroma, and has blened a serious chewy texture with uterrly delightful ripe black fruit and mint and herb seasoning. Just what Merlot ought to be."
